Here are just a few of the many bartending techniques you'll learn in "Happy Hour, The Art of Creating Cocktails".
If the spoon does not fit in the glass (shooter or shot glass) use two short straws side by side. Simply, slowly pour the liquid you want to float, onto the two straws.
* Bar Tip * 1 - The sweeter the liquid, the denser it is. The denser the liquid, the more it will sink. 2 - The more alcohol a liquid contains, the lighter it is. The lighter the liquid, the more it will float.
Place your right hand on the mixing glass with your thumb resting on the bottom of the mixing glass. Holding the shaker in this manner ensures that the shaker remains closed and will not come loose while you are shaking.

Raise the shaker up, on its side, just above shoulder level and to your right. Turn your body so you are parrallel to the bar and away from the customer. Shake vigorously, while flexing your wrists, for about 20 seconds (or until the shaker is cold). If you want your cocktail to have a lot of froth, shake a little longer. Shaking in this manner has many advantages. 1 - It allows you to blend the most difficult ingredients into a smooth, fluffy cocktail. 2 - It chills your drink faster with less wasted motion.3 - If the shaker should come looose at least your customers will be dry. 4 - It reduces body jiggle. The goal is to shake the drink, not body parts.
Place the strainer on top of the tumbler, with your right hand, so the spring is on the inside of the tumbler. The metal base of the strainer should be seated level on top of the tumbler. Keep your index finger on top of the strainer and grasp the tumbler. Pour the cocktail into the awaiting glass and decorate the drink appropriately.
